Stir together. Make a well in center. Beat butter, sugar, and egg together well. Mix in milk and vanilla. pour into well. Stir to moisten. Spoon part of batter into greased muffin tins 1/3 full. Sprinkle spice mix (see below) over top. Spoon rest of batter over top filling 2/3 full. Bake in a 400 degree oven for 20 to 25 minutes. Yield: 12 muffins SPICE MIX 1/2c packed brown sugar 2 Tbsp all purpose flour 1 tsp cinnamon In small bowl combine all ingredients. Stir together well. Sprinkle over batter as directed above. CHEESE AND BACON MUFFINS (pg 20) 2c all purpose flour 2 Tbsp granulated sugar 1 Tbsp baking powder 1/4 tsp salt 1/2c grated sharp cheddar cheese 4 to 5 bacon slices, cooked and crumbled 1 egg, slightly beaten 1c milk 1/4c cooking oil Measure first six try ingredients into a large bowl. Stir thoroughly. Make a well in center. Beat egg slightly in small bowl. Mix in milk and oil. Pour into well. Stir only to moisten. Batter will be lumpy. Fill greased muffin cups 3/4 full. Bake in a 400 degree oven for 20 to 25 minutes. Let stand 5 minutes. Remove from pan. Serve warm. Makes 12. LEMON LOAF (pg 60) 1/2c butter 1c granulated sugar 2 eggs 1/2c milk 1 1/2c all purpose flour 1 tsp baking powder 1/2 tsp salt grated rind of 1 lemon In large bowl, cream butter, sugar, and 1 egg. Beat in second egg. Blend in milk. In second bowl, thoroughly stir flour, baking powder, salt, and lemon rind. Pour over batter. Stir to moisten. Spoon into greased loaf pan, 9 x 5 x 3 inch. Bake in a 350 degree oven for 1 hour until it tests done. Remove from oven and glaze (see below). Yield 1 loaf GLAZE Juice of 1 lemon 1/4c granulated sugar Combine lemon juice and sugar in small saucepan. Heat and stir to dissolve sugar.
