Betty demonstrates how to make Bacon Waffles. These waffles make a complete breakfast, especially when paired with Slow Cooker Apple Butter from a previous video in Betty's Kitchen. Bacon Waffles 2 cups all-purpose flour 1 teaspoon baking soda ½ teaspoon salt 2 eggs, separated 2 cups buttermilk ¼ cup butter, melted ½ pound sliced bacon, fried until crisp and then crumbled cooking oil spray In a large bowl, stir together flour, baking soda, and salt. Set aside. In a medium bowl beat egg whites until stiff. Set aside. In a separate medium bowl, beat egg yolks. Stir buttermilk and butter into beaten egg yolks. Add egg yolk mixture to flour mixture and stir until combined. Gently fold beaten egg whites into batter. Gently fold crumbled bacon into batter. Cook waffles in a preheated waffle iron that has been sprayed with cooking oil spray. When each waffle is browned, transfer from waffle iron to serving plate. Serve with accompaniments of butter, honey, maple syrup, and/or apple butter.
