Irish Beef Stew/ The Best Stew Ever

Todays video is for a Hearty Traditional Irish Stew cooked like your granny used to make it. This stew is great for a cold winters day, just as a comfort food or even better the second day with loads of crusty bread. INGREDIENTS (serves 4) 3lb boneless braising steak cut into 5cm pieces 2tbsp cooking oil 2 onions cut in 2.5 cm pieces 3 tbsp plain flour 3 garlic cloves finely chopped 1 litre beef stock (homemade is best but 2 stock cubes will do) 3 carrots cut into 2.5cm lengths 2 celery sticks cut into 2.5cm lengths 1 tbsp tomato ketchup 1 bay leaf 1/4tsp thyme 1/4 tsp rosemary 2lb Maris pipers potatoes cut into large chunks salt and pepper METHOD Put a heavy based saucepan onto a high heat and add the cooking oil. when the oil starts to smoke, add the steak (in batches if necessary) and cook, stirring often for 5-8 minutes until well browned. Using a slotted spoon, remove the beef and set to the side. Turn down the heat until medium and add the onions to the saucepan and cook, stirring occasionally for about 5 minutes until translucent. Stir in the flour and cook for 2 minutes, stirring constantly. Add the garlic and cook for a further 1 minute. Whisk in 250mls of the beef stock and cook, remembering to stir to scrape up the remaining sediment from the bottom of the pan. Add the rest of the stock Add the celery, carrots, tomato ketchup, bay leaf, rosemary and 1 teaspoon of salt. Return the steak to the casserole. Bring back to a gentle simmer and cook on a low heat for 1 hour Add the potatoes, re-cover and simmer for another 30 minutes.
