🗒️ Recipe here • Peppers, 1kg • Pumpkin, a quarter • 2 Potatoes • 2 Tomatoes • 1 Garlic Head • 3 Eggs, fried Spices : • Garlic Cloves, 4 • 1 Tbsp Harissa Arbi (Tunisian Chili Paste) • 1 Tbsp Coriander • 1Tbsp Caraway • 1 Tsp Salt • Extra Virgin Olive Oil • Onion, sliced (Optional) • Cumin (Optional) • Black Olives (Optional) • Pickled peppers (Optional) • Parsley, chopped (Optional) Cooking Process : 1. Bring the peppers, pumpkin, potatoes, and cut them into small pieces, along with tomatoes cut into quarters and a head of garlic. Then, put all the ingredients on a sheet pan, drizzle some olive oil over them, and bake in the oven at 180 degrees Celsius for about 20 minutes or until they're nicely grilled. 2. Now, fry 3 eggs, and in a bowl combine the grilled vegetables with the eggs and chop them using two knives in a traditional Tunisian way to get that special taste, or use an electric appliance for the easy way. 3. For the spices, add 4 minced garlic cloves, 1 tablespoon of homemade harissa, 1 tablespoon of coriander, 1 tablespoon of caraway, 1 teaspoon of salt, and some olive oil. Mix everything well. 4. Garnish the plate with 1 fried egg, some oven-baked potatoes, sliced onion, a sprinkle of cumin, 4 black olives, pickled peppers, and some chopped parsley. Then enjoy!".
