This week on the homestead we restocked the herbal apothecary and are showing you what we keep on hand after 10+ years homesteading! We crafted a new batch of fire cider, 3 different syrups, tinctures, infused honeys, and tea blends. We also caught up on some firewood, cooked salmon over the fire, and baked a delicious chocolate rye sourdough. Next week we will be doing a cabin and property tour around the homestead and are welcoming a new addition! Thank you for following our journey on the last frontier! -Dennis, Amy & Lena filmed at our cabin on the fringes of the wilderness OPENING MUSIC BY: @HawkenHorse HOMESTEAD RECIPES CHOCOLATE RYE SOURDOUGH & Cinnamon Honey Butter 1/2 C active starter 1/2-1C water 2 tsp unrefined salt 3 C flour 1 C rye flour dash of honey, molasses 1/2 C cacao power compound butter: grassfed butter, dash of cinnamon, honey to taste, unrefined salt -whip or mix together 1) Mix starter, flour, water, and salt. Mix in molasses and honey. Add flour and cacao, stir until a shaggy dough forms. Let ferment 1.5 hrs and do 2-3 stretch and folds over 4-5 hours. Shape your ball and let rise another 1-1.5 hours. Bake covered at 450 in a hot dutch oven for 20-25 minutes and uncovered another 20 min or until golden. SALVE Plantain, Comfrey, St Johns Wort, Lavender, Calendula 4 oz infused oil 1 oz beeswax -infuse your oil by folk or heat method, strain. Combine with appropriate amount of beeswax, melt, pour into salve containers. ELDERBERRY SYRUP 2 C dried berries, 4 C water raw honey brandy -simmer berries and water 30 min, steep, strain. Combine liquid with 1:1 honey, brandy if desired. COUGH SYRUP thyme, angelica, marshmallow root, sage raw honey brandy -simmer herbs and water, strain. Combine with 1:1 honey brandy if desired. CARMINITIVE SYRUP ginger, chamomile, peppermint, lemon balm raw honey brandy -simmer herbs and water, strain. Combine with 1:1 honey brandy if desired. FIRE CIDER herbs and botanicals of your choice, i used: ginger garlic turmeric jalapeno cayenne, horseradish, black pepper, rosemary, thyme ACV with the mother -fill a mason with botanicals, cover with ACV. Cap and lt sit 4-6 weeks, strain, mix honey to taste. HERBAL HONEYS Sleep Honey chamomile, laveneder (vanilla bean is delicous too!) -Combine herbs and raw honey, sit in a jar. Winter Honey rose hips, ginger, cinnamon (vanilla is delicous too!) -Combine herbs and raw honey, sit in a jar. Fermented Garlic Honey raw honey garlic -layer honey in bottom of jar, fill with cloves, cover with honey, keep submerged. TINCTURES Fill a jar 1/2-3/4 full of your chosen herb, top with vodka, brandy, or glycerin. Steep 4-6 weeks, strain. Take sublingually. TEA BLENDS Sleep -skullcap, lavender, chamomile, Lemon Balm Immune -echinacea, ginger, elderflower, rose hips Fever -elderflower, catnip, peppermint, lemon balm (yarrow is good too) Nourish -milky oats, nettle, rose hip
