Welcome to Triple “A” kitchen, I am Teresa, and in this video, I am excited to show you how to make Pindjur, a summer appetizer very popular in Balkan country cuisine. Let’s get started! Grill or roast in the oven the tomatoes, Red Shepard peppers, and eggplants, preferably a day before you make the pindjur. Once cooled off, peel their skin, and don't forget to remove the stem and seeds. Slice them all and let them dry and cool overnight. Blend a clove of garlic, ½ a teaspoon of salt, and olive oil into large chunks. Place the vegetables and the garlic mixture in a bowl and gently mix. Add some salt for taste and generous olive oil. Ingredients 4 Red Shepard Peppers 2 Tomatoes (or a can of diced tomatoes) 2 Eggplants 2 Garlic Cloves 2 Tablespoons Salt 1 Cup Sunflower Oil or Olive Oil Traditionally, the Balkans will have Pindjur as a spread or a dip with freshly baked bread and white feta cheese.… and If you like spicy, swap out one of the green pepper for hot peppers.
