INGREDIENTS: 4 cups grated squash/pumpkin 3 cups all purpose flour 1 1/4 cups white sugar 1 1/4 cups brown sugar 3 tsps baking soda 2 tsps cinnamon powder 1 tsp salt 1 cup vegetable oil 5 large eggs pineapple tidbits raisins Mix all dry ingredients. Beat the eggs one by one. Do not over mix. Combine the beaten eggs and the oil. Pour the wet ingredients into dry ingredients. Mix well until all the powder are dissolved. Pour the grated squash into the mixture. Combine properly. Then add the pineapple tidbits but save a little for the toppings. Pre-heat the oven to 177 degrees celcius(350F). Then line the cake pans with baking paper and grease. Pour the batter between the pans. Tap the pans with batter few times to avoid air bubbles. Then sprinkle the raisins and the remaining pineapple tidbits on it. And now you're good to go! Put the pans in the pre -heated oven. Bake it for 35-45mins or until a toothpick inserted inside the center of the cake comes out clean. Once it's done remove from the oven and let it cool.
