Add yogurt, ginger-garlic paste, red chili powder, turmeric, biryani masala, lemon juice, salt, and a little oil. Mix everything well until the chicken is fully coated. Cover and marinate for at least 30 minutes (for best taste, marinate 2–4 hours). Step 2: Preparing Rice Wash basmati rice 2–3 times until water runs clear. Soak the rice for 30 minutes. Boil water with salt, bay leaves, cloves, green cardamom, cinnamon, and a little oil. Add soaked rice and cook until 70% done. Drain and keep aside. Step 3: Cooking the Chicken Masala Heat oil or ghee in a heavy-bottom pan. Add sliced onions and fry until golden brown. Add green chilies and whole spices if desired. Now add the marinated chicken and cook on medium flame until chicken is tender and oil separates. Step 4: Layering the Biryani Lower the flame. Spread a layer of cooked rice over the chicken masala. Sprinkle biryani masala, fried onions, fresh coriander, mint leaves, and saffron milk or food color. Repeat layers if needed. Step 5: Dum Cooking Cover the pan tightly with a lid or seal with dough. Cook on low flame for 15–20 minutes so flavors mix well. This dum process gives authentic Hyderabadi taste. Step 6: Final Mixing & Serving Turn off the flame and let the biryani rest for 5 minutes. Gently mix from the bottom before serving.
