To make Osterbrot Easter bread you will need: • Flour - 500 gr • Milk - 180 ml • Wine (white or rose) - 60 ml • Sugar - 50-60 gr • Butter - 100 gr • Raisins - 100-150 gr • Eggs - 2 pcs. • Yeast - 6-7 gr • Salt - 1 tsp. • Vanilla sugar - 10-12 gr • Lemon, orange, star anise, cardamom, cloves - to taste Additionally: • Syrup or honey - 1 tbsp. • Almond flakes - to taste Easter bread preparation steps: 1. Prepare flavored wine: • mix wine with citrus slices, star anise, cardamom and cloves • bring the wine to a boil • remove from heat and leave on the table to cool completely • strain the wine through a sieve 2. Prepare the dough: • mix warm milk, sugar, yeast and 3-4 tbsp. flour from the total • cover the bowl with a lid and leave for 20-30 minutes 3. Knead the dough: • add strained wine to the dough - mix • add vanilla sugar and eggs (without 1 tablespoon) - mix • add flour (through a sieve and in several stages) • when the dough has gathered into a lump, add softened butter • mix the butter into the dough • after all the butter has been mixed in, knead the dough for about 10-15 minutes more 4. Round the dough, cover and leave for 1-2 hours (until it doubles in size) 5. Form Osterbrot: • knead the risen dough • mix raisins with flour or starch (1 tablespoon) • add raisins to the dough – mix the raisins into the dough • round the finished dough and put it on a baking sheet covered with parchment paper • cover the preparation of Easter bread and leave for 30-60 minutes (until it increases in size) • mix 1 tbsp. egg mass and 1 tbsp. milk • grease the preparation of Easter bread with egg-milk mixture • make cuts crosswise on the piece of bread 6. Bake Easter bread in an oven preheated to 180 degrees for 30-40 minutes 7. Grease ready and hot bread with syrup or honey 8. Sprinkle with almond flakes 9. Leave on a wire rack to cool completely 10.
