It works with meat, fish and vegetarian dishes and for this, it goes very well with tapas as well. The original recipe is an emulsion of garlic and oil and currently you can still find it in Catalonia (as allioli), Valencia and Murcia. In the rest of the Spanish regions they add eggs and milk as well. And as a curiosity, if you are travelling into Canarian Islands, do not be afraid for get a green sauce as they add avocados and different herbs.
