From high-end plates on Fogo Island to simple seaside shacks like Doyle's Lobster Pond, each one was different and delicious. So I came home and had to try making my own! This recipe uses fresh cod, mashed potatoes, summer savory, and good ol' scrunchions (salt pork bits) for frying. Newfoundland Cod Cakes Recipe Ingredients 750 g (1½ pounds) salt dried cod (or substitute fresh fish) 60 mL (¼ cup) butter 1 small chopped onion 4- 6 potatoes, mashed 1 egg, beaten 30 mL (2 Tbsp) dried savoury 2 mL (½ tsp) black pepper Method: Soak the salt cod in cold water overnight, change the water once or twice. Simmer the salt cod in boiling water for about 15 minutes. Remove the cod, and allow to cool to room temperature. Flake the cod apart with a fork into small pieces. In a sauté pan, melt the butter over medium heat. Add the onions and cook until they are softened. Transfer the onions to the mashed potatoes and add the flaked cod, egg, pepper and savoury. Mix together until well combined, then form into small cakes and roll in flour. Fry the fish cakes in scrunchion over medium heat until golden brown on both sides.
