This simple low-fat chicken stew is inspired by the flavours of Tuscany. English closed captions courtesy of Daniel Bartolo. Ingredients 400 g (14 oz) chicken (thighs, breast or legs) 400 g (14 oz) chopped tomatoes 300 g (10 oz) can of cannellini beans, drained 1 red capsicum (bell) pepper, deseeded and sliced 1 small onion, thinly sliced 1 garlic clove, crushed 4 tbsp (alcohol-free) white wine (optional) 2 tbsp breadcrumbs 1 tsp dried oregano 1 tsp olive oil Salt Pepper Instructions Heat the oil in a pan and brown the chicken. Remove and keep warm. Add the onion and red pepper to the pan and sauté gently for a few minutes until they soften. Add the garlic and fry for a further 30 seconds. Add the chicken, tomatoes, oregano and wine. Season well and bring to the boil. Simmer gently for 20-30 minutes or until the chicken is cooked. Stir in the drained beans and cook for a further 5 minutes to warm the beans through. Sprinkle the breadcrumbs on top and place until a hot grill (broiler) until golden brown.
