Strain and extract the milk — this is thick coconut milk. 👉 Use this only at the final stage. Do not boil. • Thin Coconut Milk (2nd Extract): Take the same ground coconut again, add ¾ to 1 cup warm water, grind lightly and strain. This gives thin coconut milk, which is used for cooking the chicken. Shortcut option: If using store-bought coconut milk, dilute it with water: Thin milk: 1 cup coconut milk + 1 cup water Thick milk: use coconut milk as it is PRO TIPS : • Chicken choice: Always use chicken with bones for this gravy. Bones add natural flavour and make the coconut-milk gravy richer. • Pepper flavour: Use freshly ground black pepper for best aroma. You can increase or reduce pepper based on your spice tolerance. • Coconut milk tip: Add thick coconut milk at the final stage and do not boil. Just bring it to a steam level to avoid curdling. • Onion sautéing: Do not brown the onions. They should be soft and translucent to keep the gravy creamy and light in colour. • Potato addition: Hand-crushed boiled potatoes help naturally thicken the gravy without using cashew paste or flour. • Coriander stems for flavour: Finely chopped coriander stems release more flavour than the leaves when sautéed. Adding them while cooking enhances the aroma without overpowering the gravy. • Masala balance: Keep spices mild. This dish is meant to be comforting and warming, not overly spicy. • Best pairing: This chicken gravy tastes best with appam, idiyappam, kallappam, or soft chapatis. • Resting time: Let the gravy rest for 10 -15 minutes after cooking - the flavour improves as it sits.
