Link “Swamiji’s Kitchen “ Channel / swamijiskitchen 😊 407 Tamilnadu Pongal Recipe with Coconut Curry…. In a pressure cooker add 1 cup rice after soaking for 15 minutes and 1/2 cup mung dal. Mung dal has to be dry roasted first on tawa then washed 2 to 3 times. Add 5 to 6 cups water, salt to taste, 10 to 12 black pepper corns, chopped ginger, 1/4th tsp turmeric powder ( optional.. if white pongal then skip haldi), 1 stick cinnamon, 3 cardamom, few curry leaves, 2 tbs ghee. Mix. Cook for 3 to 4 whistles. Add hot water for flowy consistency. Mix. Tempering… In a tadka pan add 2 tbs ghee, 1 tsp each of jeera, mustard seeds, chana dal, urad dal. Then 12 cashews, slit green chillies 4 to 5, stir, add 3 dry red chillies, lots of curry leaves, 1/4th tsp hing, 1/2 tsp black pepper powder. Stir and add in the Pongal. Mix. Serve. Coconut curry with Vegetables…. Take out fresh coconut milk in 2 parts the thick milk and the watery one. Chop veggies.. 1/2 carrot, 5 to 6 french beans, 1/2 cup peas and 3 drum stick. Take chopped ginger and 3 green chillies. Boil everything in the cooker with the watery coconut milk for 2 whistles. 1 tbs chana dal and 3 chopped green chillies sauté and mixie. Paste ready. Add in thick coconut milk. Mix this with the cooker ingredients. Mix. Add 1/2 tsp haldi and salt to taste. Tempering… In Tadka pan add 1 tbs oil, 1 tsp jeera, 2 chopped green chillies, lots of curry leaves, 1/4th tsp methi seeds, 1 tbs chana dal. The tadka should be strong. Add in the curry and mix.
