This is a comforting dish made in most Vietnamese households. Most people make this dish with catfish, but I wanted to try a different version. The salmon is flavorful, juicy and tender. Don't forget to add drizzle the sauce onto your rice. It is delicious! Vietnamese Style Braised Salmon Recipe Ingredients: 3 salmon steaks 4 TB sugar 4 TB fish sauce 1 1/2 teaspoon salt 1/4 teaspoon black pepper 2-3 TB chopped green onions and cilantro 2 TB oyster sauce 1 can Coco Rico 2 onions 8-10 cloves garlic 2 bulbs shallots 1/2 cup cooking wine 1. In a big bowl, add 1 teaspoon salt and rub the salt into the salmon. 2. Pour 1/2 cup of cooking wine into the bowl and let it sit for 10 minutes. 3. Rinse the salmon and set it aside. 4. Slice the shallots, garlic, and dice the onions. Set the onions aside. 5. Add shallots, garlic, and 4 TB oil into a small pot. Set it on medium heat and stir until golden brown. It takes about 10 minutes. Set it aside. 6. In a big pan, place half of the onions on the bottom. Then place the 3 salmon steaks on top of the onions. 7. Pour in the 4 TB fish sauce, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 2 TB oyster sauce, 2 TB sugar, and 2 TB water and turn the heat to medium. 8. Add in the fried shallots and garlic. Optional: you can add the oil too. 9. Pour in the whole can of Coco Rico. 10. Let it simmer uncovered for 1 1/2 hours. 11. Top your salmon with green onions and cilantro. Enjoy it with sliced tomatoes, cucumbers, and steam rice.
