roasted veggie + feta bowls ✨ ~Day 15 of 30 easy family dinners~ RECIPE ~ ingredients: -1 cup wild rice -2 cups vegetable broth -2 tbsp butter -1 can chickpeas, drained and rinsed -2-3 zucchini/squash, cubed -2 cups cherry tomatoes, halved -3 cloves garlic, minced -4 tbsp olive oil, split in two -1 tsp oregano -1 tsp paprika -1 tsp salt -1/2 tsp pepper -1 cup feta, cubed -1/2 tbsp red pepper flakes ~ 1. Preheat oven to 425F. 2. In a saucepan, combine rice, broth, and butter over high heat. Bring to a boil, then reduce heat to low and simmer, covered, for 35 minutes. 3. While rice cooks, prepare the roasted veggies. In a large sheet pan or baking dish, add chickpeas, zucchini/squash, tomatoes, garlic, drizzle of olive oil, and seasonings. Toss together. 4. Scatter cubed feta throughout pan mixture and top with an additional drizzle of olive oil and red pepper flakes. 5. Cook for 20 minutes until everything is roasted. Serve on top of rice and enjoy! ~ I love a good veggie dinner and this one is SO full of flavor!
