Who doesn't love Chocolate Covered Strawberries? This muffin recipe uses that same flavor combo in muffin form. These are also low fat by using greek yogurt instead of extra oil or butter. These are a quick and easy treat, perfect for Valentine's Day or any day of the year! Makes 8 Muffins Ingredients: 1 cup flour 1/4 teaspoon salt 1/4 tsp baking powder 1/4 tsp baking soda 1/3 cup sugar 2 tbs oil 3 tbs milk 1 egg 5 ounce contatiner strawberry greek 2-3 drops Red Food Coloring (optional) 1/2 cup chopped fresh or frozen (do not thaw) strawberries 1/4 teaspoon vanilla extract 3 tbs chopped chocolate or mini chocolate chips Directions Preheat the oven to 350 degrees In one bowl mix together the flour, baking soda, baking powder, and salt. In a separate bowl, whisk together the oil, milk, egg, yogurt, vanilla, and food coloring. Stir the dry ingredients into the wet ingredients. Then stir in the strawberries and chocolate. Spray a muffin tin and fill 3/4 full with the batter. Bake for 20-22 minutes until toothpick comes out clean. Cool for 5 minutes and enjoy.
