This time they’re spicing up boring meringues - which one are you sacrificing first? Serves 6–8 Total time: 2 hours (including cooling time) Ingredients 130g egg white (from about 4 medium eggs) 260g icing sugar Gel food dyes (green, yellow, orange, black, as desired) Method 1. Preheat the oven to 80°C and line one large baking sheet with baking paper or silicone mats 2. Add the egg white and icing sugar to a bowl. Using a handheld electric whisk, whisk on medium-high speed for about 10 minutes, or until the mixture is bright white, glossy and holds stiff peaks 3. Divide the meringue into bowls and colour as desired. Transfer to piping bags, using larger amounts for bodies and smaller amounts for features like arms, legs, ears, tails, or beaks To pipe frogs: 4. Use a smaller bags for the eyes, arms and legs, pressing down peaks as needed To pipe ducks: 5. Using yellow meringue and a large piping bag, pipe the body with greater pressure at first, then drag and taper off at the tail end, flicking it up slightly. Pipe on a small blob for the head. Use a damp finger to press down peaks. Pipe a small orange beak with an extra small piping bag To bake and decorate: 6. Bake the meringues for 1 hour 30 minutes. Switch off the oven and leave them inside to cool completely 7. Add facial details with an edible black pen or black food dye mixed with a little water. Stick on edible eyes using a sugary syrup (such as golden syrup), holding them in place for a few seconds so they adhere
