Adhirasam Recipe Ingredients: Maavu pacha arisi– 500 g Pure jaggery ( vellam) – 250 g Dry ginger powder (sukku podi) – ½ tsp Oil – for frying Method: 1. Prepare the rice flour: Wash the raw rice well and soak it for about 2–3 hours. Drain the water and spread it on a clean cloth for about 30 minutes (it should still be slightly damp). Grind it in a mixer to a fine, smooth powder while it’s still a bit moist. Do not dry roast; store it covered so it stays moist. --- 2. Make the jaggery syrup: In a pan, add jaggery and ¼ cup or 3-4 tsp of water. Heat until the jaggery melts completely, then strain to remove impurities. Return it to the pan and boil until you reach the “soft ball” or “string” consistency — when you stretch a drop of syrup between your fingers, it forms a thin thread. At this stage, reduce the flame. --- 3. Mix the dough: Gradually add the moist rice flour into the hot jaggery syrup while stirring. Add ½ tsp of dry ginger powder (sukku podi). Mix well until it comes together as a soft, sticky dough. Once mixed, let it rest covered until heat goes to absorb the flavors. --- 4. Frying the Adhirasam: After resting, make small balls of the dough. Grease a plastic sheet or banana leaf and flatten each ball into a small disc. Heat oil mixed with a little oil on medium flame. Fry each adhirasam one at a time until golden brown on both sides. Gently press between two ladles to remove excess oil. --- 5. Storage: Let it cool completely before storing in an airtight container. It stays soft only the next day. Stays good for up to 10 days at room temperature. --- 💡 Tips: The dough should be soft and pliable — not too dry. If it becomes hard, add a little warm jaggery syrup to adjust the texture. Maintain medium heat while frying to avoid over-browning. keep additional flour, so incase you will need while making the dough Do not add elachi, it might taste different.
