Loosely designed on Saison Dupont. This Belgian Saison is light, crisp, complex and thirst quenching. Everything a Saison should be. A full recipe for how to brew a saison is included, including water profile, with malt grain percentages and IBU figures, so that the recipe can be brewed by anyone at home. A Belgian Saison differs from a French Saison by being a little less attenuated and slightly less tart or sour on the finish. This ale is a very clean ferment, resulting in a beer that on the very initial sip, feels as light and crisp as a light pale lager. Then the more complex fruit, herb and spice of the saison yeast appear.
