Shunde (顺德), a small city under Foshan (佛山) city in Guangdong Province (广东省), China, is the very soul of Cantonese cuisine (粤菜). Known as "China's Kitchen," this place is filled with enticing aromas from every street corner and alley, where Shunde locals take their meals seriously from dawn to dusk. Here you can taste authentic delicacies like pork offal congee (猪杂粥), double-skin milk (双皮奶), and fried milk (炸牛奶). You'll also encounter unexpected ingredients—snakes, scorpions, soft-shell turtles, regular turtles, and even crocodiles—all transformed into steaming hot delicacies through unique preparation methods. Shunde people use masterful heat control and knife skills to turn various ingredients into surprisingly delicious dishes. They are unconventional and bold in their culinary experiments, while being extremely particular about preserving natural flavors, freshness, and traditional cooking techniques.
