Happy new year everyone! it's the year of black tiger! let's cook eggplant with 'black' vinegar for year of 'black' tiger! 《Ingredients》 Eggplant Scallion(or spring onion), Thai Chili, Garlic Black vinegar, Soy sauce, Sugar, Chicken powder, Pepper, Starch, Cooking oil Colored soy sauce(optional) 《Recipe》 1. Dice 2 eggplants into edible size. 2. Cover diced eggplants with 3 spoons of starch, sprinkle little water then mix well. 3. Chop 3 scallions and mince 3 pieces of garlic. 4. Mix 3 spoons of black vinegar, 2 spoons of soy sauce, 1 spoon of black colored soy sauce(optional), 3 spoons of sugar, 1/3 spoon of chicken powder and little pepper to make sauce. 5. Put enough oil in a deep pan and heat. 6. When oil is heated enough, set the heat to medium-high then deep fry eggplant until it gets golden brown. 7. Get a new pan, put 2 spoons of cooking oil then stir fry minced garlic. 8. Put in 1 handful of whole Thai chili into the pan, deep-fry little then put in the sauce made in step 4. 9. As soon as the sauce boils, put in fried eggplant into the pan and cover them well together.
