In this video I show you how to make Cauliflower Spanish Rice. Super easy, vegan, gluten free and low carb. Here is what you will need to make Cauliflower Spanish Rice. 1/2 finely chopped onion 2-3 cloves minced garlic 3 T tomato paste 1 to 1 1/2 cups veggie broth 1/2 cup chopped veggies 1/2 tsp cumin 1/3 tsp salt. 2 to 4 cups riced cauliflower Start by sauteing the onion in a little bit of veggie broth for about 5 minutes. Next add garlic and saute for 1 to 2 minutes. Push garlic aside and add tomato paste to the bottom of the pan to make sure it gets a little carmelized for a couple of minutes. Add veggie broth, start with 1 cup you can always add more later. Make sure all ingredients are incorporated then add veggies, cauliflower and spices and combine and cook for about 5 minutes until rice is tender Remember what you put on your plate determines your fate.
