Ingredients (Serves 2) 1 medium courgette (zucchini), chopped into strips A handful of pitted olives, cut into circles (green, black, or both) 1 shallot, chopped A handful of chopped sundried tomatoes 1 teaspoon of rinsed capers 1 clove of garlic, crushed 1 small mild chili pepper, chopped 200g of farfalle pasta (butterfly pasta) Olive oil Salt and pepper, to taste Fresh basil, for garnish Grated Parmesan cheese (optional) Instructions Prepare the Zucchini Mix: Heat a generous amount of olive oil in a large frying pan over medium heat. Add the chopped courgette (zucchini) and crushed garlic. Shallow fry for about 5 minutes until the zucchini begins to soften. Add Remaining Ingredients: Stir in the chopped shallot, pitted olives, sundried tomatoes, rinsed capers, and mild chili pepper. Season with salt and pepper to taste. Let the zucchini mixture cook for another 5 minutes, allowing the flavors to infuse. Cook the Farfalle Pasta: In a large pot, bring salted water to a boil. Cook the farfalle pasta according to package instructions, but remove it 2 minutes before it's fully cooked. Combine Pasta with Zucchini Mix: Reserve a cup of the pasta cooking water and drain the pasta. Add the semi-cooked pasta to the zucchini mixture along with a splash of the reserved pasta water. Stir well and cook for another 2 minutes, allowing the pasta to absorb the flavors and finish cooking. Finish and Serve: Add fresh basil leaves and an extra drizzle of olive oil to the pan. Stir gently to combine and enhance the flavors.
