How to Can Sweet Pickled Beans. Syrup ingredients: 3 1/2 cups vinegar 2 cups Sugar 1 1/2 teaspoon canning salt 1/4 teaspoon black pepper 1/4 teaspoon celery seed 1/4 teaspoon ground ginger 1/4 teaspoon ground nutmeg 3/4 teaspoon mustard seed 3/4 teaspoon ground turmeric 3/4 teaspoon ground cinnamon 1/8 teaspoon ground red pepper 3 1/2 cups water Combine all ingredients in sauce pan and bring to a boil and light boil for 10 to 15 minutes. Pack beans in sterile canning jars (whole beans stand vertically and pack tightly) Pour hot syrup over beans leaving 1 inch head space, remove air bubbles adding syrup as needed. Wipe rims with clean, damp towel. Place warm lids on jars and add rings (Hand tight) Process in hot water canner. 15 minutes for pints and 20 minutes for quarts. Makes between 6 to 8 pints, depending on how tightly the beans are packed. Note: I should have added more beans to each jars after removing the air bubbles and packed them tighter. This would have eliminated the space caused for shrinkage caused by the beans cooking.
