In today’s cozy Ramadan prep vlog, I prepared chicken kofta and beef shami kabab for freezing to make Ramadan easier and more organised. For breakfast, I made simple eggs with leek, then went grocery shopping to buy fresh meat and chicken. After coming home, I cleaned, portioned, and froze everything to prepare ahead for the blessed month 🤍 Ramadan preparation for me is not just about cooking — it’s about planning, organising, and creating a calm home before Ramadan begins. I hope this vlog gives you motivation and simple ideas for your own Ramadan prep ✨ Thank you so much for watching and supporting my channel 🤍 Chicken Breast Kofta (Minced Chicken Breast Kebab) Ingredients: 🍗 Minced chicken breast – 1.5 kg 🧅 Onion – 1 to 2 medium (grated and excess water removed) 🧄 Garlic – as needed (about 3–4 cloves) 🫑 Bell pepper – as needed (½ to 1, finely chopped) 🌿 Fresh coriander or parsley – 3 tablespoons, finely chopped 🌶️ Green chili (optional) – 1 to 2, finely chopped 🧂 Salt – about 1½ teaspoons (adjust to taste) 🌶️ Black pepper – 1 teaspoon 🌿 Ground cumin or ground coriander – 1 teaspoon 🥄 Chicken spice or garam masala – 1 teaspoon (optional) 🫒 Olive oil – 1 to 2 tablespoons 🥙 Chicken Breast Kofta Recipe Method: 1️⃣ In a large bowl, add the minced chicken breast. 2️⃣ Squeeze the grated onion to remove excess water and add it to the chicken. 3️⃣ Add garlic, finely chopped bell pepper, fresh herbs, and green chili (if using). 4️⃣ Add salt, black pepper, ground cumin, and chicken spice. 5️⃣ Add olive oil and mix everything well with your hands until fully combined. 6️⃣ Shape the mixture into kofta or kebab shapes immediately (no resting time needed). 7️⃣ Cook in a pan over medium heat with a little oil, turning until golden and fully cooked. Or bake at 180°C for about 20–25 minutes until cooked through. ✨ For freezing: Shape the koftas and freeze them raw in portions for later use. 🥙 Shami Kabab Ingredients: 🥩 Beef – 1 kg 🥔 Potatoes – 3 medium 🧅 Onion – 1 🌾 Chana dal (split chickpeas) – ½ cup 💧 Water – 1 cup 🌿 Coriander seeds – 2 tablespoons 🧄 Garlic powder – 1 tablespoon 🌶️ Black pepper – ½ teaspoon 🌶️ Red chili powder – ½ teaspoon 🥚 Egg – 1 🥄 Bread crumbs – as needed 🌶️ Shami kabab masala – 1½ tablespoons 🫒 Olive oil – 4 tablespoons (for frying) 🥙 Shami Kabab Recipe Method: 1️⃣ In a pressure cooker, add the beef, chana dal, onion, and potatoes. Add 1 cup of water and cook under pressure for about 20 minutes until everything is soft and fully cooked. 2️⃣ After cooking, let the pressure release. Make sure any excess water has dried. 3️⃣ Transfer everything to a blender or food processor and blend until smooth. 4️⃣ Then add all the spices one by one (coriander seeds, garlic powder, black pepper, red chili powder, and shami kabab masala). Mix well. 5️⃣ Shape the mixture into your desired kabab shape. 6️⃣ Fry in olive oil until golden brown on both sides. ✨ If you like, you can shape them and freeze for later use. 🧄 Garlic & Ginger Paste (For Freezing) Ingredients: 🧄 Garlic – 500 g (peeled) 🫚 Fresh ginger – 2 to 3 tablespoons (or a small piece, chopped) 🫒 Olive oil – 4 to 6 tablespoons 🧂 Salt – 1 teaspoon (optional) ⸻ Method: 1️⃣ Peel and wash the garlic and ginger, then let them dry completely (very important for freezing). 2️⃣ Add garlic and ginger to a blender. 3️⃣ Add olive oil and salt. 4️⃣ Blend until smooth and creamy. 5️⃣ Spoon into ice cube trays or small containers. 6️⃣ Freeze until solid, then store in freezer bags for easy daily use.
