One rotisserie chicken, FOUR meals, and serious savings! 💸 In today’s Tightwad Tuesday, I’m showing you how I turn a single store-bought rotisserie chicken into multiple budget-friendly meals. This is Part 1 of the series, where I break down the first meals and show how to stretch groceries as far as possible without sacrificing flavor or convenience. Perfect for: ✔️ Budget cooking ✔️ Frugal living ✔️ Meal stretching ✔️ Saving money on groceries Chicken Cobbler 1 stick of butter 1.29 Shredded Chicken 1.25(chicken 4 servings) 1 bag of frozen mixed vegetables .98 Dollar Tree Garlic Herb 1.25 biscuit mix 2 cups of milk 1.25 1 can of cream of chicken .70 2 cups of chicken broth .65(.1.93 but divided 3 meals) Total of 7.31 Preheat oven to 350°. Melt butter in casserole dish, spread chicken on top, then layer with vegetables, mix biscuit mix with milk and seasoning packet and pour over the layers, then mix can of cream of chicken with 2 cups of broth and pour over everything, DO NOT MIX!!! Bake 45 min, let sit 10-15 min, there will be gravy so don’t overcook. ENJOY! Chicken Enchiladas Shredded chicken 1.25 Cream Cheese 1.56 Enchilada sauce 1.00 Flour tortillas 1.25 Shredded cheese 1.87 Taco seasoning.47 Tomato .33 Cilantro .83 Total 8.56 Sides: Knorr Mexican Rice 1.24 Refried beans 1.25 I added sides and it was divided into all 4 meals for 9.07 per meal Preheat oven to 350°. Mix chicken with cream cheese, taco seasoning, and 1/2 of shredded cheese and a few teaspoons of enchilada sauce. Stuff tortillas with chicken mixture and roll up. Add half if the enchilada sauce in casserole dish then add your chicken enchiladas on top, then add remaining sauce on top, then sprinkle with remaining cheese.
