I used 250g All-purpose/plain flour and 250g bread flour • 300ml lukewarm water (about 35°C) 1¼ UK cups / 1¼ US cups • 2 tsp (10g) salt • 2 tsp (7g) instant dry yeast • 1 tbsp (15ml or 14g) olive oil • 1½ tsp (7g) sugar Oven to 220°C (430°F) 200ml boiling water into the lower tray to create steam.
