Patin fish also known as Silver Catfish. Steamed Patin Fish is one of the popular fish dish in Chinese restaurant and it's really delicious! The flesh is smooth and juicy. Lately there are a lot of fish seller selling this Frozen Patin Fish Slices on Facebook live. And we are going to give this a try. Instead of steam method, we are going to fry it. Here’s a recipe how to prepare Claypot Kung Pao Patin Fish. *Recipe for 3-4 pax PATIN FISH SLICES 巴丁鱼肉 (400g) SALT 盐 (1/4 TSP) WHITE PEPPER 胡椒粉 (1/4 TSP) GINGER JUICE 姜汁 (1 TSP) RICE FLOUR 粘米粉 (1 TSP) CORN FLOUR 玉米粉 (1 TBSP) -PREPARE SEASONING- DARK SOY SAUCE 黑酱油 (1 1/2 TSP) SOY SAUCE 酱油 (2 TBSP) CHINESE BLACK VINEGAR 黑醋 (3 TBSP) SUGAR 糖 (1 TBSP) WARM WATER 温水 (60ml) -KUNG PAO INGREDIENTS- OIL油 (1 TBSP) GINGER SLICES 姜片 (20g) SPRING ONION 青葱白 (2 STALKS – WHITE PORTION) DRIED CHILI 辣椒干浸软 (10 PCS SOAKED) RED ONION 洋葱 (100g CHOPPED) CORN STARCH SLURRY 芡汁 (2 TBSP) SPRING ONION 青葱段 1) Marinate patin fish with salt, white pepper & ginger juice. Mix well. 2) Add in rice flour & corn flour, set aside. 3) Prepare seasoning. Mix all ingredients and set aside. 4) Preheat oil in wok. Fry fish until golden brown. Remove & drain. 5) Preheat oil, stir fry ginger slices, spring onion white portion, dried chili. Fry until fragrant. 6) Add in Red onion, toss for a while. Add in seasoning. 7) Once boiled, add in corn starch slurry. 8) Add in fish when sauce thicken. Stir to combine 9) Pour fish into preheated claypot.
