AD Laws Experimental Rye Whiskey is 100% San Luis Valley Rye with 50% raw rye and 50% malted rye. It is then aged for three years in ISC 53 gallon Char 3 American White Oak casks. The rye whiskey is finished for three months in 225L French Oak Sauternes Casks. Then the rye is triple distilled and non-chill filtered before it is bottled AT 50% ABV/100 Proof. In 2020, AD Laws San Luis Valley Rye Bottled-In-Bond won the World Whiskey Best Rye Whiskey under 12 years old. The point being, AD Laws does whiskey right! While we have our own opinion on this bottle, here is what the distillery says about it: A very wet spring in 2015 produced a very plump and oily grain. This presented production challenges that we solved by distilling it a third time producing a bright and fruity rye. Laying the sweet notes of sauternes into the distinctive flavors from the crop year was a paring we just couldn’t pass up.
