Vegetable Upma is a quick, tasty, and healthy South Indian breakfast dish made with semolina (rava) and fresh vegetables. This recipe is perfect for busy mornings and is loaded with flavors from mustard seeds, curry leaves, and fresh veggies. It’s light, nutritious, and can be customized with your favorite vegetables. Try this simple upma recipe and enjoy a wholesome start to your day! Ingredients 1 cup semolina (rava/sooji) 2 tbsp oil or ghee 1 tsp mustard seeds 1 tsp urad dal (optional) 1 tsp chana dal (optional) 1-2 green chilies finely chopped 1 small onion finely chopped 1 cup mixed vegetables (carrots peas beans ) chopped 1-inch ginger grated 8-10 curry leaves 3 cups water (adjust as needed) Salt to taste Fresh coriander leaves for garnish Lemon juice Method 1 Dry roast the semolina on medium heat until light golden and aromatic Keep aside 2 Heat oil in a pan add mustard seeds When they splutter add urad dal chana dal and sauté till golden 3 Add chopped onions green chilies ginger and curry leaves Sauté till onions turn translucent 4 Add the mixed vegetables and cook for 3-4 minutes 5 Pour water and salt into the pan and bring it to a boil 6 Slowly add the roasted semolina while stirring continuously to avoid lumps 7 Cook on low heat stirring occasionally till the semolina absorbs the water and becomes soft 8 Cover and cook for 2-3 minutes on low flame 9 Garnish with fresh coriander leaves and squeeze lemon juice . 10 Serve hot with coconut chutney #VegetableUpma #HealthyBreakfast #SouthIndianRecipe #EasyBreakfast #UpmaRecipe #QuickMeals #VegetarianRecipe #IndianBreakfast #HomemadeUpma
