In a bowl, add wheat flour, methi leaves, spices, cumin seeds, mint, coriander, green chillies and salt. Gradually add water and knead into a soft dough. Rest for 10 minutes. Divide dough into balls, roll into parathas. Cook on a hot tawa with little oil/ghee until golden brown on both sides.
