The original workaround was to use a USB to ethernet adapter or setup on another computer that was supported to get to the web interface. Thankfully, I figured out how to edit the boot file. The main sentiment you get when asking questions like this is "buy server hardware". Here's someone else having the same problem and them being told that it simply doesn't work (https://www.truenas.com/community/thr...) This goes against the whole motto of reusing old hardware as a server. Realtek is not some random company, and lots of people are going to have these 2.5Gb cards in the future as they seem to be the standard on modern motherboards. I am definitely not going to waste a PCIe slot on a network card when I can be using that to add extra storage.
