Saved and grown lovingly for 8,000 years in the Middle East, saperavi is my new favorite. The grape is easy to grow on happy healthy vines clonally coming from Ukraine. The wines coming from this small one acre plot are staggeringly delicious and inform me the indeed, and isn’t wine was delicious. There’s evidence in Georgia old wineries and historic sites that the wine residues in ancient tanks is saperavi. Humans have not only made this wine for thousands of years but also protected if from losses due to drought, freezing, wars, migration, poverty and cultural preference shifts. I’m honored to be making the worlds most cared for and delicious wines from saperavi. #wawine #saperavi #saperica #georgianwine
