I hope you have the most loveliest day! #cozyspring #cottagecore #slowliving Carrot cake: 2 1/4 cup oil 3 cups sugar 4 1/2 cups shredded carrots 1 1/2 cup crushed pineapple 3 cups flour 1 tablespoon baking powder 1 teaspoon baking soda 1 teaspoon cinnamon 1 teaspoon ground cardamom Frosting: 2 blocks cream cheese 1 stick butter 4 cups powdered sugar 1 1/2 teaspoons vanilla extract Preheat oven 350. Grease and line 3 8” pans In a large bowl whisk oil, sugar, and eggs one at a time Add carrots and pineapple and lightly combine Add dry ingredients and gently mix until well incorporated Bake 350 for about 45-55 minutes until middle is set Let cool and add frosting
