First peri peri masala is made and the boiled pasta is cooked in creamy sauce. Veggies are also added to make it more nutritional. I have added capsicum, cherry tomatoes and blanched broccoli but you can add any veggie like sweet corn kernels, peas, carrot. Try this yummy pasta and do tell me in comments how it turned out for you. 1 cup=250 ml 1 tbsp=15ml 1 tsp=5ml Prep time: 15 minutes Cooking time: 30 minutes Serve: 4 Ingredients: For peri peri spice mix Red chili powder – 3 tsp Red chili flakes – 1 tsp Garlic powder – 2 tsp Ginger powder – ½ tsp Dried oregano – 2 tsp Cinnamon powder – 1/8 tsp Cardamom powder -1/8 tsp Black salt/ kala namak – 1 tsp Salt – ½ tsp Sugar – ½ tsp Pepper powder – ¼ tsp Other ingredients: Pasta – ½ cup Water to boil pasta Oil – 2 tbsp Garlic cloves chpped -1 tbsp Mixed bell peppers – 1 cup Onion petals – 1 small onion Cherry tomatoes halves – 1 cup Blanched broccoli – ½ cup Salt and pepper to taste Red chili flakes – 1 tsp Oregano – 1 tsp Lemon juice – 1 tsp Butter – 3 tbsp All-purpose flour/ maida – 3 tbsp Milk – 750 ml Tomato ketchup – 3 tbsp Processed cheese – ¼ cup or 3 cheese cubes Recipe: Make peri peri masala by combining ingredients listed under peri peri spice mix. Grind all together into a coarse powder. You can make in large quantity and store in bottle in refrigerator for future use. Heat oil in a pan. add garlic cloves. Cook for few seconds. Add onion petals and bell peppers. Stir fry on high flame for 1 minute. You will observe chars over capsicum. Don’t overcook them otherwise they will lose crunchiness. Add halved cherry tomatoes and blanched broccoli. You can add other seasonal veggies too. Cook for a minute. Add oregano, red chili flakes, salt and pepper to taste. Mix well. Keep these cooked veggies aside. Meanwhile, boil pasta as per packet instructions. Keep this aside. Heat butter in another pan. add maida. Stir continuously until it is turned light brown. Add 2 tbsp of peri peri masala. Mix well. Add milk (750 ml) but in batches. Stir continuously so that no lumps should form. Cook till creamy thick sauce is formed. Add tomato ketchup. Mix well. Add cooked veggies and boiled pasta. Mix well. cook for 2 minutes. Lastly add processed cheese and mix it well.
