The Twin Towers were important cultural and symbolic landmarks, not only representing America and NYC, but also as a symbol that represented the idea of "American exceptionalism" (whatever that means) and were a huge cultural part of ourselves, so it's only natural that the Twin Towers would see MANY appearances in video games, just the same way they see MANY appearances in any art form such as movies, books, paintings, music and stories.
