Ingredients You'll Need • 4 egg yolks • 85g sugar • 250ml cream • 250ml milk • 1 vanilla bean The instructions Step 1 Crème Anglaise 1. Extract your vanilla seeds. 2. Place a saucepan on your heating element 3. Put the milk and cream and half the sugar into a saucepan 4. Bring the mixture to a simmer 5. Let the vanilla infuse for 5 minutes 6. Then bring to a boil 7. Mix the rest of the sugar and the egg yolks in a bowl 8. Add a small amount of the heated mixture to the eggs 9. Put everything back into the saucepan 10. Make a creme anglaise, meaning heating the mix while constantly stirring until it reaches 84C 11. Then immediately transfer into a bowl 12. Refrigerate completely Step 2 Freezing The Mixture 1.
