Put chicken in the fridge for 12 to 24 hours. 3 tablespoons chopped ginger 3 tablespoons chopped garlic 1 to 2 teaspoons salt 1 teaspoon white or black pepper 1 teaspoon Asian 5 spice powder 3 tablespoons cooking oil 3 tablespoon Chinese BBQ sauce (or Chinese bean sauce) In a mixing bowl, mix all the ingredients together. Bring the chicken out from the fridge and let in warm up for at least 1 hour. Put half the sauce in the cavity opening of the the chicken. Put the other half of the sauce and smother the outside of the chicken. Be sure to cover the bottom side of the chicken. Leave a small amount of sauce in the mixing bowl. Add a tablespoon of honey to the mixing bowl and mix well. This is the sauce that will be use to baste the chicken during cooking. Preheat the oven at 420 degrees. Put the chicken in the oven and cook for the first 30 minutes at 420 degrees. Turn the chicken around at the end of thirty minutes, to make sure the chicken is cooked evenly. Turn down the heat to 350 degrees and finish cooking the chicken for 30 minutes at 350 degrees. In the last 15 or 20 minutes, use a brush or spoon to baste the honey sauce over the chicken. The cooking time for a 3 1/2 lb. chicken is about 1 hour. For a larger chicken, cook longer. Let the chicken rest for 15 to 20 minutes after you take it out from the oven.
