Heat clarified butter in a pan, add a piece of cinnamon with chicken, garlic paste and salt, fry chicken for 10 mins till light golden, then mix yogurt with the brown onion mixture, also add in it chili powder, coriander, ginger julienne, salt, mix well add all this to the chicken, cook on very low flame for 30 mins till chicken gets tender, leave it on dum, sprinkle screw pine water on top, serve with sheermaal. --------------------------------------------- KHARAY MASALAY KA GOSHT Ingredients Mutton 750 gm Onions 2 Yogurt ½ cup Tomatoes 2 Button red chilies 8 Green cardamom 4 Fennel seeds 1 tsp White cumin seeds 1 tsp Ginger finely chopped 2 tbsp Green chilies 6-8 Garlic finely chopped 2 tsp Coriander leaves chopped ½ cup Yogurt ¾ cup Salt 1 ½ tsp Oil as required METHOD Heat oil, add mutton, all the spices, fry well, cook for 10 mins covered, open, add yogurt, tomatoes, add ½ cup water, cover and cook for 30 mins till mutton, tomato and onions tender, fry well till oil comes on top, serve garnished with coriander leaves and roti. --------------------------------------------- EGG WITH PEAS Ingredients Peas 1 cup Eggs 4 – 6 Ginger garlic paste 1 tsp Button red chilies 4 – 5 crushed remove seeds Onion chopped 1 cup Green chilies 4 finely chopped Coriander leaves ½ cup Oil ½ cup Salt 1 tsp leveled METHOD Beat eggs, add in all the spices, heat oil, fry peas for 5 mins, now add in the beaten eggs, stirring continuously, when eggs done, add in chopped green chilies and coriander leaves, serve with paratha.
