In this video, I'll show you how to make ultra-creamy whipped feta paired with jammy roasted cherry tomatoes, garlic, olive oil with a lemon zing for the ultimate crowd pleasing recipe. Why you will love this recipe: Easy and quick to make *Perfect appetiser or snack Great for entertaining Mediterranean flavours Totally addictive Don't for get to like and subscribe if you like what we do #whippedfeta #roastedtomatoes #easyappetizer Whipped feta with roasted cherry tomatoes Ingredients For the tomatoes: 1 Cup/175g Cherry tomatoes 1 whole garlic clove 2 sprigs of fresh thyme 2 tbsp extra virgin olive oil Flaked sea salt For the whipped feta: 8 oz/225g Block Feta Cheese 2 tbsp Full fat Greek yoghurt 1 tsp Lemon zest 1 tbsp Lemon juice 1 tbsp Extra virgin olive oil ½ Roasted garlic bulb Pinch Black Pepper Fresh flat leaf parsley Instructions 1. Pre- heat your oven to 180 degrees C or 355 degrees Fahrenheit. 2. Place the tomatoes, whole garlic clove (with the top ¼ removed) and thyme into a roasting tray. Drizzle with extra virgin olive oil and sprinkle with flaked sea salt. Put into the oven for 25 minutes. 3. Whilst the tomatoes are roasting, into a food processor add the feta cheese (broken up), the Greek yoghurt, the lemon zest, the lemon juice, the black pepper and the olive oil. Blend in the processor for 2 – 3 minutes. In between each minute don’t forget to scrape down the sides. 4. After 25 minutes, remove the tomatoes from the oven. Take the garlic out of the tray and squeeze out the roasted garlic into the mixture in the food processor. Blend the mixture again for a further minute. 5. Spoon the mixture out of the food processor bowl onto the plate you are serving the dish on. Using the back of a dessert spoon swirl the mixture. 6.
