This refreshing sorbet combines the creamy sweetness of bananas with the tart, slightly floral notes of rhubarb for a balanced summer treat. Bananas contribute natural creaminess while providing potassium and fiber, supporting hydration and digestion. Rhubarb is a source of antioxidants, including anthocyanins, which may support cellular health. A touch of orange brightens the flavor and adds vitamin C. Ginger is optional but brings a subtle warmth and digestive support. If desired, sweeten cooked rhubarb with honey or maple syrup to taste before freezing. Creamy Banana Rhubarb Sorbet Makes: 2 cups Ingredients: 2 cups chopped rhubarb stalks 1 orange 2 cups frozen bananas 1-inch piece ginger, optional Directions: 1. In a small saucepan, add the chopped rhubarb. Zest the orange and add the zest to the pot, then squeeze in the orange juice. Peel the ginger and finely grate into the rhubarb. 2. Cook the rhubarb over low-medium heat for about 5 minutes, or until it softens and starts to break apart. Allow it to cool, then transfer the mixture to a silicone ice cube tray. Freeze overnight. 3.
