Today we will be making Chicken Liver, Onions and Brewis Ingredients: 1 Package or 2 Cups Chicken Liver 1 Large Onion ( chopped) 2 Knobs of Hard Bread 1 Tbsp Butter ¼ Cup Fat Pork ½ Tsp Black Pepper 2 Tbsp Flour 1 Cup Vegetable broth Method: First soak hard bread for 2 to 4 hours or over night. -In a large cast iron pan or pan of choice, add butter and chopped fat pork, start to fried until fat pork is a light brown. -Then add chopped onion, and chicken liver. -Fry until onion and liver starts to caramelize and is golden brown. Then add flour mix around then add broth, or you can just have the fried onions, liver with pork fat. -Continue stirring until it thickens, add more broth if needed. -In a small saucepan with 1 cup water boiling, add the hard bread, warm for 5 minutes. -Plate pieces of hard bread, then top with chicken liver and onions.
