Apricot Balls Apricot balls/slice was something I (Page) was rarely allowed as a kid so in my adult life I absolutely love them and probably overindulge when I do make them. Be warned as eating too much-dried fruit can give you a bit of a sore tummy. I personally find that they are so expensive to buy when I demolish them so quickly, so I now just make them, and they are one of those snacks that are super easy to make with only a handful of ingredients. You can keep it simple and just use the main 3 ingredients which are apricots, condensed milk, and shredded coconut or you can spice it up and add more. I added chia seeds to mine as they are a rich fiber source which is great to be eating on hikes as it makes you feel fuller for longer along with heaps of other health benefits. This recipe can also be used to make a slice, instead of rolling the mixture into balls line a baking tray with baking paper and fill it with the mixture, press down with a spatula, and refrigerate overnight. Once firm cut into bite-sided pieces. Recipe 500g of dried apricots 2 1/2 cups Finely shredded coconut and extra where needed if the mixture is too sticky 1x 397g can of condensed milk Chia seeds, as much as you desire Method -Dice apricots finely, you can use a food processor however I find that the apricot can become quite sticky and get stuck under the blade. So I stick to just finely dicing the apricots. -Once all the apricots are diced add the remaining ingredients and mix thoroughly, mix with hands if needed, (sometimes this is easier). Once mixed line and try or plate with baking paper. Your are now all set to start rolling your mixture into balls. Not seen on the video, but recommend, I found my mixture a bit too sticky after I had made all my balls and refrigerated them so I rolled them in some extra coconut off-camera.
