在这个多雨又寒冷的天气,最合适来一碗暖暖的汤了。 或许很多人以为这个姜片麻油鸡只能做月子的时候吃,但其实即使不做月子,平时也可以作为一道温补的养生料理。 不仅可以降低感官上的寒冷,还可以驱走体内的寒气,关键还非常美味。 🥣 材料 Ingredients: 4个鸡全腿(约1,060克), 老姜 138克, 麻油 4-5大勺, 白米酒 约400毫升, 盐 1小勺,冰糖 10克, 枸杞 1小把。 4 Chicken Thighs (about 1060g), Old Ginger 138g, 4-5 Tablespoons of Sesame Oil, White Rice Wine 400ml, 1 teaspoon of Salt, Rock Sugar 10g, A Handful of Goji Berries. ‼️ 1 大勺 = 1 Tbsp = 15 ml,1小勺 = 1 tsp = 5 ml 📝做法 Methods: 1. 鸡肉切块,姜切片。 Dice the chicken, slice the ginger. ‼️我用的鸡腿,你也可以用整只鸡。 ‼️姜也可以切丝。做月子餐的话要去皮,平时吃的话去不去姜皮随意。 ‼️I made it with chicken thighs, you can also use a whole chicken. ‼️You can also cut the ginger into shreds. If you cook for confinement, the ginger skin must be removed, if just for food cravings, it is up to you to remove or retain the skin. 2. 锅中烧热麻油,倒入姜片用半煎半炒的方式一直炒到姜片释放出香味,并且周围有些许的焦香,就可以倒入切好的鸡块。 Heat up the sesame oil in a wok, Fry the ginger until fragrant and slightly charred, and then add the chicken. 3. 加1小勺的盐,快速的不停的翻炒。一直炒到鸡肉完全变色了以后,就沿着锅边淋一圈白米酒,继续不停的翻炒1、2分钟的样子。 Add 1 teaspoon of salt and fry until the chicken change colour, pour the white rice wine along the edge of the wok, stirring constantly over high heat for about a minute or two. 4. 加冰糖,再倒入白米酒直到酒大致上没过鸡肉。 Add rock sugar and white rice wine until the white rice wine cover the chicken. ‼️冰糖可以不加。 ‼️传统的麻油鸡就是不加一滴水的,但是如果你不喜欢汤太过浓郁的话,可以用一部分清水代替白米酒。 ‼️Rock sugar is optional. ‼️Traditional sesame oil chicken is braised entirely with rice wine without adding water. But if you don't want the soup to be so rich, you can use some water instead of white rice wine. 5. 先开着盖子,大火煮2-3分钟,让酒精挥发。然后关上锅盖,用中小火炖煮15-20分钟。 Just open the lid, heat for 2-3 minutes over high heat, let the alcohol evaporate.
