Today I'm going to share with you some of my favourite ways to use up leftovers, save money and reduce waste. Right, so what's in your fridge right now? Go and check, I'll wait... I'm willing to bet there are at least two types of vegetable that have seen better days, right? My first tip is DO NOT THROW THEM AWAY. They may be past the stage of you wanting to serve them up with pie and mash but they are still fine to eat. So, whack them into a colander, give them a good wash, peel and chop roughly. Stick them into a big pan with a litre or two of stock, stick on the lid and leave to simmer over a medium heat. When they're all lovely and soft, attack them with the stick blender, then stir through a few dollops of cream, yoghurt or crème fraiche and season to taste. It's enough healthy vegetable soup to feed the family. And to think you were going to throw all that away! You can do similar with leftover roast chicken -- either make a stock by boiling the bones and straining, or use a stock cube to make up a litre of stock, boil up the leftover meat until hot, whiz with the trusty stick blender, stir through some cream and a little seasoning and maybe some spice -- it's SO yummy and quick. So what else is in your fridge? Not much? Sometimes, using up leftovers is about planning. One thing I've pretty much always got in the fridge is ready roll puff pastry because it's such a great base for using up leftovers. For example, unroll it, spread it with a little left over pasta sauce, dot over a few pieces of leftover cooked veg or meat of your choice, top with a sprinkling of cheese and stick it in the oven for 20 to 30 minutes. It'll all puff up beautifully and you'll have a really great puff pastry pizza. It's easy and really tasty -- and if you want to be posh you can call it a veggie tart. Or equally, get a pudding basin. Fill it with leftover chicken and ham, maybe a few blanched leeks. Pour in some cream and milk, season, give it a good stir and then top with a circle of puff pastry. When it comes out of the oven you'll have a really impressive looking puff pastry chicken pot pie. Delicious and it will definitely impress the kids. And finally...what's for dessert? Go and grab the scarily black and bruised bananas languishing at the bottom of your fruit bowl. Mash them up and add a medium egg and 50g of flour, butter and sugar for every banana. Mix it all up.
