SERVINGS: Makes one 2lb loaf which serves 1-4 people. INGREDIENTS: 3½ cups (1lb/450g) of self-raising flour. 1 level teaspoon of baking powder. Pinch of Salt. 2 dessertspoons sugar. 3½ tablespoons (2oz/50g) butter. 1 egg, medium-sized, beaten. 1¼ cups (275ml/9floz) milk. METHOD: 1. Preheat the oven to 200°C/400°F/Gas 6. 2. Lightly dust a flat baking tray with flour. 3. Sieve the flour, baking powder and salt into a large mixing bowl. 4. Then add the sugar and mix well. 5. Add the butter/margarine to the dry ingredients and mix with your fingertips until the mix resembles breadcrumbs. 6. Add the egg and milk to make a soft dough, not too wet or sticky. 7. Sprinkle flour on to a worktop/counter-top. 8. Then gently knead the dough for 3-5 minutes to remove the stickiness of the dough. 9. Shape into a ball about 1½"/4cm in height. 10. Place on a greased baking tray or baking paper. 11. Cut a cross on top of the loaf so it rises evenly. 12. Bake for about 40 minutes until golden brown. 13. Gently turn over and tap the underneath, if it makes a hollow sound then the loaf is done. 14. Serve freshly baked and with real butter. 15. Mmm Scrummy!!!
