Divide the ground beef into three equal pieces and place each ball in between two sheets of parchment. Using a large spatula or the bottom of a pot, push down on the ball to form a very thin patty. Repeat with remaining meat. 2. In a large cast iron skillet or griddle over medium high heat, add vegetable oil. Once oil is shimmering, add patties and season the top with adobo. Cook for 3 minutes, or until deeply golden brown on one side. 3. Sprinkle the top of the patties with onions and flip each patty. Season the other side with adobo and cook for another 2 minutes. 4. Using 2 steel spatulas, chop the patties and the beef into small pieces, continuously mixing and stirring to incorporate the two. Reduce the heat to low and arrange the meat mixture into a long line. Add 3 slices of cheese in a row and cover to melt the cheese. 5. Lay the heros on a cutting board, open-faced. Zig zag equal parts ketchup and mayonnaise over each side. Divide the meat into 2 and add to the bottom buns. Top with shredded lettuce and tomato and top bun. Lightly press down to compress the sandwich and cut it in half.
