Turron de Jijona ( Turron de Xixona) is soft Spanish nougat made with almond paste, white eggs, and honey. Ingredients: 300g of grilled ground almonds 200g of honey 100g of sugar 1 egg white. Directions: 1/ In a pan, Heat honey and sugar 2/ Meanwhile, whisk the egg white until it becomes firm 3/ Add the egg to the mix of honey and sugar, gently stirring constantly ( ideally off heat ) 4/ Add the ground almonds and stir continuously until the mixture becomes thick 5/ Put in a mold lined with parchment paper 6/ Cool for 24 hours before cutting the Nougat. N.B.: You can add lemon zest or vanilla for flavor You can use only honey without sugar ( this, I guess the original recipe ) and in this case, 300g of honey. Happy Cooking!
