Khasta Matar Kachori and Aloo Dum Recipe | Must Try Winter Recipe | #khastakachori #matarkachori #aloodum #aloosabji #winterrecipe Khasta Matar Kochuri & Aloo Dum Recipe | Matar Puri with Aloo Dum Recipe👇 Ingredients For Kochuri Dough : Atta (whole wheat flour) Maida (refined flour) Suji (semolina) Salt – to taste Sugar – a little Oil – for kneading Water – as needed --- For Matar Filling: Boiled green peas (matar) Ginger (अदरक) Green chilli (हरी मिर्च) Cumin seeds (Jeera / जीरा) Coriander powder (धनिया पाउडर) Salt – to taste Sugar – to taste Cumin powder (Jeera powder / जीरा पाउडर) Garam masala Hing (हींग) Fresh coriander leaves (हरा धनिया) Oil – for cooking --- For Aloo Dum: Main Ingredients: Small boiled potatoes Salt – to taste Refined oil – for frying and cooking Whole Spices (साबुत मसाले): Bay leaves (तेज पत्ता) Green cardamom (हरी इलायची) Cinnamon (दालचीनी) Dry red chilli (सूखी लाल मिर्च) Black peppercorns (काली मिर्च) Black cumin / Shah jeera (शाह जीरा) Powdered Spices (पिसे मसाले): Kashmiri red chilli powder (कश्मीरी लाल मिर्च) Red chilli powder (लाल मिर्च) Turmeric powder (हल्दी) Black pepper powder (काली मिर्च पाउडर) Cumin powder (जीरा पाउडर) Coriander powder (धनिया पाउडर) Roasted cumin powder (भुना जीरा पाउडर) Others: Chopped onions Chopped tomatoes Fresh coriander leaves Water – as needed --- Method 1. Prepare the Kochuri Dough Mix atta, maida, and suji in a bowl. Add salt, a little sugar, and oil. Add water gradually and knead into a soft dough. Apply a little oil, cover, and rest for 15 minutes. --- 2. Prepare the Matar Filling Grind boiled green peas with ginger, green chilli, cumin seeds, coriander powder, salt, and a little water into a paste. Heat oil in a pan, add hing and cumin seeds. Add the paste and cook until it dries. Add salt, sugar, cumin powder, and garam masala. Cook well, add coriander leaves, switch off the flame, and let it cool. Make small balls from the filling. --- 3. Make & Fry Kochuri Divide the dough into portions. Stuff with matar filling, seal, and roll gently. Fry the kochuris on low flame until golden and crisp. Keep aside. --- 4. Fry the Potatoes (Aloo Dum) Poke boiled small potatoes with a fork. Heat refined oil, add potatoes, sprinkle salt, and fry until lightly golden. Remove and keep aside. --- 5. Prepare Aloo Dum Masala In the same pan, heat oil and add whole spices. Add chopped onions and sauté until translucent. Add chopped tomatoes and cook well. Add salt, Kashmiri red chilli powder, red chilli powder, turmeric, black pepper powder, cumin powder, and coriander powder. Add a little water, cover, and cook until the masala becomes bhunna (oil separates). --- 6. Dum the Aloo Add fried potatoes to the masala. Add a little water, cover, and cook on low flame. Stir gently in between. Finish with roasted cumin powder and fresh coriander leaves.
